Three Bean Spring Salad

Spring has finally sprung! Which means summer is right around the corner, time to get bathing suit ready ladies! To help you get a head start on being healthy and getting in shape for summer I have the perfect delicious and healthy recipe for you.



Serves: 4

Ingredients:

1 can of garbanzo beans
1 can of cannellini beans
2 cups of green beans
½ bunch of cilantro
½ red onion
1 bag of quinoa brown rice (Seeds of Change)
1 cup of cherry tomatoes
3 tbsp white wine vinegar
¼ cup of olive oil
1 tbsp of Dijon mustard
1 tbsp of honey
1 clove of garlic
1 tsp dried oregano
Salt and pepper to taste
Parmesan cheese

1.      Put the bag of quinoa brown rice in the microwave for 90 seconds.
2.     Cut the ends off the green beans then cut them in half.
3.     Cut cherry tomatoes in half.
4.    Drain garbanzo and cannellini beans.
5.     Combine all ingredients in bowl.
6.     Mix and garnish with parmesan cheese.
