Carbs, Carbs, Carbs!

Carbs! Who doesn't love 'em? Pasta is one of Ella's favorite meals (or maybe just mine, shhh don't tell Craig!) My household loves anything quick and easy! So this easy peasy recipe has become one of our weekly favorites. We can't get enough!


Being a full time mom is exhausting--joyous but exhausting. At the end of the day the last thing any mama feels like doing is cooking. Recipes need to be quick, easy, inexpensive, and most importantly delicious. I’m so happy to share this dish with you, hope your little minions devour it like my Ella and hubby do! 

Serves: 4

Ingredients:

2 Tbsp Olive Oil
4 Cloves of garlic, minced
½ White onion
1 Package of Italian sausage
2 Cans of diced tomatoes
1 Bunch of parsley
½ Cup Red Wine
4 Oz of goat cheese
1 Box of rigatoni
½ tsp Red pepper flakes
½ tsp Oregano
Parmesan Cheese

Salt & Pepper to taste



1.      Heat olive oil over medium. Add onions and garlic and sauté for 3-4 minutes until onions are golden brown - While sautéing bring your pasta water to a boil.

2.     Remove sautéed onions to the side and cook Italian sausage  
3.     Combine onions, 2 cans of diced tomatoes, oregano, red pepper flakes, red wine (Optional), salt and pepper to the Italian sausage; let simmer for 15 minutes. 

4.      Cook pasta according to package directions.


5.      Add chopped parsley and goat cheese to the pan and let simmer another 5 minutes or until the goat cheese melts.




6.      Once pasta is removed, drain and mix pasta with sauce in a mixing bowl. 
7.      Garnish with parsley and parmesan cheese.
